POSITION SUMMARY:
Current Opening: One PRN position; various hours and shifts based on department needs.
Actively participate in the holistic care of the resident. Prepare and serve food daily residents as outlined on the weekly menu plan and/or food related activities. Ensure proper food handling, preparation, service, labeling, & storage in accordance with regulations. Actively interact with residents and participate in a resident oriented service and environment.
ESSENTIAL FUNCTIONS:
- Prepare food daily as outline on the weekly menu plan and activities schedule.
- Assist with menu planning; review and adjust menus with lead cook and Dietary nutrition coordinator to accommodate food in season, vendor sale prices, special events and holidays.
- Alter or adapt recipes to accommodate special dietary needs of residents or to improve recipes, utilizing little or no added sodium (salt).
- Identify food and supplies needed for upcoming menus and report needs to the Dietary Coordinator or Director.
- Prepare meats for storage and portion control upon delivery; ensure proper storage of all delivered foods and ingredients.
- Maintain a clean, orderly and safe kitchen and dining room environment.
- Ensure proper handling, labeling and storage of food for infection control.
- Ensure compliance with regulations and food code, including food temperature control.
- Coordinate and participate in serving food and cleaning up after meals.
- Monitor portion control to meet residents’ requests and minimize waste.
- Ensure attractive presentation of food on the plate before serving.
- Maintain an accurate record of chargeable meals (guest meals, etc.) and non-chargeable meals (resident, employee and marketing) Submit record to the Dietary Coordinator as directed.
- Notify Dietary Coordinator, Director, and/or Engineering personnel of malfunction of equipment or appliances.
- Encourage and invite residents to provide input regarding the food service program and activities.
- Participate in resident activities.
- Actively participate in discussions to enhance the dining experience and overall well-being of the residents and the Heartland Community.
- Report resident observations to Dietary Coordinator, RN, and/or Director.
- Provide input for resident assistance plans.
- Maintain all assigned logs. Document care in resident chart according to Heartland Policy and/or Protocol.
- As time allows, assist in any activities that do not require nursing certification or license.
- Other duties as assigned.
KNOWLEDGE, EDUCATION AND EXPERIENCE REQUIRED:
- Must be at least 18 years of age.
- High School diploma or GED.
- Commercial and/or healthcare cooking experience preferred.
- Understanding of nutritional needs of the elderly and special diet considerations.
- Current food code and food safety practices.
- CPR Certification or obtain during preliminary employment period.
- Current ServSafe Certification or obtain as soon as possible after hire.
SKILLS AND ABILITIES REQUIRED:
- Add, subtract, multiply, and divide using whole numbers, common fractions, and decimals, and understand the basic metric system.
- Compute rate, ratio, and percent and have knowledgeable in metric, apothecary or appropriate measurements and can convert from one system to another.
- Critical thinking skills, including the ability to work independently, evaluate a situation and report findings to Dietary Coordinate and/or Director.
- Read, write and speak in English fluently.
- Read and interpret simple instructions and documents such as recipes, memos, resident information forms, various logs, safety rules, operation and maintenance instructions, and procedure manuals.
- Write and verbalize correspondence amongst staff members.
- Work with residents with varying levels of dementia or confusion.
- Ability to maintain composure, objectivity and professionalism while working in an environment of constant interruption.
- Speak effectively to customers, co-works, guests and residents individually and in small groups.
PHYSICAL DEMANDS/REQUIREMENTS:
- Regularly lifting or move objects weighing 10 lbs., frequently lift and/or move up to 25 lbs. and occasionally lift and /or move up to 50 lbs.
- Regularly work with hot surfaces such as range, BBQ grill and cold surfaces such as refrigerators and freezers.
- Regularly work with kitchen equipment and tools, including sharp knives.
- Specific vision abilities required by this position include close vision, distance vision, color vision, peripheral vision, and depth perception.
- Reaching, handling, feeling, talking, hearing, stooping, bending, crouching, walking, Standing, and working with equipment.
- The employee is also subject to exposure to blood and body fluids, proximity to moving mechanical parts, electrical shock, exposure to burns and radiant energy, exposure to explosives, exposure to toxic chemicals and biological agents.
